HBJ are proud to offer the world-renowned wines of Louis Michel under the exclusive on-trade label of Domaine de laTour Vaubourg.
The domaine of La Tour Vaubourg takes its name from the hermitage of Saint Vaubourg (a saint originally from Devon), founded in the 12th century near a fresh water source in the Chablis vineyard - in what is now Valmur in fact.
All the 25 hectares of vineyards are situated in the heart of the original terroir, in which the Cistercian monks began making wine in the 12th Century. On average the vines are a distinguished 40 years old, which means the wines inherit a the true character of the terroirs. The unique soil type is made up of marl, limestone and oyster fossils, which are more than 150 million years old.
All the appellations of the Domaine are developed on fine lees in stainless steel tanks in order to favour the complexity and purity of the aromas and to respect the different flavours of the respective Crus of Chablis.
The Michel longstanding family motto “To work with nature without going against it.” has a great resonance with the food and wine culture prevalent in the UK’s restaurants today.
