Pinot Gris 100%, from Vavasour's own vineyard in the Awatere Valley. The Awatere Valley is a sub-district of Marlborough, with its own particular terroir. The grapes were harvested by hand. A proportion (15%) of the juice was fermented in old, French oak barriques, using wild yeasts, and frequent stirring of the lees. The larger portion was fermented in stainless steel with selected yeast cultures.
This resulted in a wine which retains the fresh fruit flavours from the vineyard, with additional complexities coming from the wild fermentation, and lees contact.
