Chardonnay 100% from the estate. The valley’s highest vineyards are reserved for this wine. These have well-drained, stony soils that assure perfect ripening of the grapes. They are located on south-facing slopes at the top of the Nekeas valley, at an altitude of 600 m above sea level, under the Sierra de San Martín. Large pebbles are found in the poor, reddish earth, these create well-drained, chalky soils where the vines send down deep roots. Th southerly orientation and stony nature of the vineyards encourage early and complete ripening.
The grapes undergo skin maceration at cold temperatures for several hours. This wine is made exclusively with free-run must. Alcoholic fermentation takes place in French oak casks. No commercial yeasts are used. Complete malolactic fermentation. The wine matures in cask on the lees with frequent bâtonnage for about eight months.
