Melon de Bourgogne 100%, grown on the estate; the least possible intervention is made in the vineyard, and only organic fertilisers are used. Many of the vines are now classed as 'vieilles vignes' - old vines. These contribute to the depth and complexity of flavour.
The grapes are pressed as slowly as possible and the different pressings are fermented separately. The must is filtered before fermentation, and then given a long, slow, controlled fermentation. The wine is matured on the fine lees (sur lie) and bottled in the Spring following the harvest.
