Shiraz 100% from Bimbadgen's Palmer's Lane and McDonald's Road vineyards in the Hunter Valley and a small (7%) proportion from the Orange district of NSW. After a challenging season, the grapes were hand-picked, destemmed and crushed so as to leave some grapes intact. Fermentation was made in vat, then the wine was settled for a few days; then half of it spent nine months and the other half 14 months in oak. For the first time, Signature was bottled and released under screw cap.
TASTING NOTE
Deep red with vivid purple hues. A powerful nose reminiscent of ripe blueberries and raspberry jam. The spicy aromatic note, along with some soy sauce and herbal aromas adds complexity. The oak is pertinent and is part of the style. It adds to the fruit lift and volume.
Rich, ripe and complex! Dark fruits and forest mulch earthiness combine with sweet oak and tannin, creating a harmonious blend which is ready to drink now, but will age and soften given time in the cellar.
